Navigate to your dashboard and select the customers tile
you can perform the following actions from suppliers and subcontractors too

Select the customer you wish to add the note for
You can use the filters above the company name column for this

Click on New Note in the customer toolbar

Select or enter a communication type

Enter a subject for the note

Enter your note

Click on Save
